White Chocolate Macadamia Cookies

Here is my first post at blogger and I'll open my journal with my favourite cookies, white chocolate macadamia cookies. The search of the recipe began because of my husband's and also my favourite cookies from Subway. Whenever we have a meal at Subway, we always get this cookie. The cookie has crisp texture on the edge and soft chewy centre.





I started the 'research' by finding what ingredients that might be in the cookies and I was lucky. Nowadays, it's a mandatory for a food company to declare the ingredients in some countries due to the allergen issues. I found the ingredient lists from Subway's own website. The next step is just to find a similar cookie recipe and modify it.

There are heaps of recipes for this type of cookie in the internet. Almost every copycat said that it was similar or even better but we could only find out until we tried it by ourselves. Then, I came accross the recipe from Exclusively Food by Amanda and Debbie. The basic ingredients are there and I only need to adjust the quantity and add other ingredients to it.

Here is my copycat version of Subway's White Chocolate Chip Macadamia Cookies. Definitely not the same as the original as I used butter and did not use extra molasses. However, the taste is pretty close...


Ingredients:
70g butter, Coles reduced salt, softened
45g margarine, Logicol original
80g caster sugar, CSR
80g brown sugar, CSR

1 egg, min 59g mass

1 Tbsp golden syrup
1 tsp water
1 tsp vanilla extract, Queens

250g plain flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt

50g macadamia halves, Sunbeam, chopped very coarsely
60g white chocolate chips, Nestle chocolate bits


Baking Directions:

Prepare flour mix by sifting the ingredients in a bowl.

In another mixing bowl, beat butter, margarine and sugars until light and creamy. Scrape the bowl, add egg then beat until well combined. Then, add golden syrup, water and vanilla. Beat until combine.

Add flour to the butter mixture and fold until combined. Then, add nuts and chocolate. Fold in well. (When I mix them, I prefer to use my hands to spoons. Somehow, it's easier.)

Keep the mixture in the fridge. Preheat the oven to 170 deg C (convection oven). Line two baking trays with baking paper. When the temperature of the oven has been reached, take the mixture out from the fridge. I used an ice cream scoop to take the mixture and form the dough into balls. Put the dough on the tray and flatten slightly.

I put only 6 dough balls on the tray and bake them for 10 minutes or until the edges are golden brown. I bake one tray at a time.

Leave the cookies on the tray for a few minutes, just to let them firm up. Transfer cookies to a cooling rack.


Yield:
26 cookies about 35g after baking

WHITE CHIP MACADAMIA NUT: Enriched bleached flour (wheat flour, malted barely flour, niacin, reduced iron, thiamin mononitrate, riboflavin, folic acid), sugar, margarine, (palm oil, butter, water, salt, mono and diglycerides, sodium benzoate, natural flavor, citric acid, vitamin A palmitate, beta carotene powder, lecithin, artificial flavor), macadamia nuts, eggs, molasses, water, natural and artificial flavor, baking soda and salt. CONTAINS: Macadamia nuts, wheat, milk, eggs and soy. (Due to the nature of how these cookies are displayed they may come in contact with other peanut-containing cookies). But where are the white chips?
